Ingredients

For the gnocchi

This potato gnocchi recipe keeps the ingredients simple so the flavour and texture of the gnocchi remain the focus.

1 kg russet potatoes
1 large egg
300 g all-purpose flour
5 ml sea salt
250 ml basil garlic pesto


For the basil garlic pesto

100 g fresh basil leaves
125 g toasted pine nuts
82 g grated parmesan cheese
2–3 garlic cloves
7.5 ml lemon juice
82 ml olive oil


For the tomato mascarpone sauce

670 g diced tomatoes
334 g mascarpone cheese
24 g garlic cloves, minced
12 g fresh basil
16 g thyme
16 g rosemary
40 ml olive oil
7 ml sugar
12 ml salt
8 ml black pepper
Zest of one lemon


Method

Bake the potatoes at 220°C until tender, about 45–60 minutes.

Peel the potatoes while still warm and mash until smooth.

Place the potatoes on a lightly floured surface. Add the egg, salt and part of the flour. Fold gently until incorporated. Continue adding flour gradually until a soft dough forms.

Divide the dough into eight pieces and roll each piece into ropes about 2 cm thick. Cut into small sections.

Flatten each piece slightly, add a small spoon of basil pesto in the centre and fold the dough around the filling to seal.

Bring salted water to a boil and cook the gnocchi until they float to the surface, about 1–2 minutes.

Remove and set aside.

Blanch the tomatoes briefly and remove the skins. Roast them with olive oil and garlic until soft.

Blend the roasted tomatoes into a smooth puree. Place in a pan and season with herbs, salt, pepper and a small pinch of sugar.

Add mascarpone cheese and stir gently until the sauce becomes smooth and creamy.

Warm a pan with a little olive oil and lightly sauté the gnocchi with rosemary and thyme.

Add the gnocchi to the sauce and coat evenly before serving.

Finish with fresh basil and parmesan.
